Blueberry and Pomegranate Salad
- ¼ c. pecans
- 6 c. mixed salad greens
- ⅓ c. fresh pomegranate seeds
- 2 oz. reduced fat feta cheese
- ⅓ c. fresh blueberries
- ⅛ c. pomegranate balsamic vinegar
- 1 T. lemon juice
- Chop pecans and place in large bowl.
- Add salad greens, pomegranate seeds, feta and blueberries. Toss to combine all.
- Whisk together balsamic vinegar and lemon juice for dressing and pour over salad.
